LEMON RICE RECIPE vage icon


INGREDIENTS

  • Rice- 200 gm or 1 cup (as per US RATIO).(rinsed twice and soaked for 20 mins and boiled Al dente.)
  • Hot water - 400ml or 2 cups
  • Urad dal and chana dal - 1:1 approx. 1 tbsp.soaked for an hour in hot water.
  • Sesame seeds(white)- 1and 12 tbsp roasted.
  • Mustard seeds-2 tsp
  • Curry leaves-1 Sprig or 10 no
  • Green chilly-2 nos chopped fine.
  • Lemon-3 nos juiced
  • Turmeric powder-2 tsp.
  • Red chilly flakes-1 tsp.
  • Peanuts-30 gm roasted.
  • Onion-1 nos sliced.
  • Grated coconut-12 cup roasted.
  • Coriander leaves-few sprigs chopped.
  • salt-to taste
  • Oil-2 tbsp.
LEMON RICE RECIPE

PROCEDURE

Heat oil in a vessel, add the mustard and curry leaves until they crackle.

Add the sliced onion and fry till translucent.

Add the soaked dal and fry till cooked on shallow heat.

Now add the turmeric and red chilly flakes with the finely chopped green chillies.

Add the boiled rice and stir fry. Sprinkle the lemon juice and some water over this,cover with lid and allow to steam for a few minutes till the rice is soft.

Add the roasted peanuts, sesame seeds and grated coconut and mix into the rice.

Garnish with chopped coriander and serve hot.
